It's a year we'll quickly leave behind. But not before we take stock of the impact we've made in the past year. While that impact was considerably less than the year before, we still managed to save 34 tons of coffee grounds from being incinerated for our clients.
As you may recall, the nursery was opened by Alderman Bonte on May 24, 2019. So 2020 was the first year our new nursery was fully operational.
This means we've grown for a full year across all four seasons for the first time. This gives us a good overview of our energy consumption and the amount of energy generated. And guess what: we generated more energy than we used. Our solar panels provide enough energy to power our mushroom production AND 100% electric, emission-free transport through the city center.
In addition, between the first and second lockdown, we were able to supply various Rotterdam restaurants with delicious oyster mushroom snacks.
The oyster mushroom croquettes and bitterballs are made in collaboration with Bakkerij van der Heijden in Rotterdam. Making one oyster mushroom bitterball saves a whopping 30 liters of water compared to beef. We sold 110,928 snacks in 2020, saving at least 3,327,840 liters of water .
When we look at the CO2 footprint of our primary process, we distinguish four components: the nursery's electricity consumption [38,703 kWh], the electricity consumption for charging the electric bus [6,671 kWh], the CO2 emissions resulting from sending parcels from the webshop [801 kg CO2], and the energy generated by our solar panels [43,067 kWh].
This results in a net consumption of 2,307 kWh. To convert this electricity consumption to CO2 emissions, we use an emission factor of 0.649 kg CO2 per kWh of gray electricity. Source
Ultimately, our primary business activities resulted in the capture of 9,409 kg of CO2. This means our operations were once again CO2 negative in 2020.
